Peach kissel with cottage cheese

We think kissel is undeservedly forgotten nowadays. However, this old Russian drink may be a great alternative to lemonades and smoothies during hot summer days. Cold kissel will still both your thirst and hunger. Vary the proportion of liquid and starch to get a thicker or watery drink. Potato starch is preferable for kissel, as corn starch won’t give the necessary transparency. Make this peach kissel, serve it with whipped cottage cheese or cream and enjoy the old Russian dessert.

Prepare the ingredients, wash the peaches.

Cut the peaches in half, remove the stone and peel. Cut the flesh into pieces. Alternatively, use nectarines or apricots.

Separate 60 ml water and reserve. Pour the remaining 740 ml water into a pan, add the peaches and bring to a boil. Add the sugar and lemon juice. Reduce the heat and cook, stirring from time to time, for 5-7 mins, till the peaches are soft. You may add more sugar if your peaches are not very sweet.

Puree the mixture with a blender till smooth.

Add the starch into the reserved water and mix quickly till homogeneous. Keep stirring the peach mixture and gradually add the dissolved starch. Bring to a boil again and remove from heat at once. Let cool, stirring from time to time. Refrigerate for 1 hour.

Mix the soft cottage cheese with a fork or whisk till homogeneous. If you want, add some sugar, icing sugar or honey.

Remove the kissel from the fridge and pour into glasses. Top with the cottage cheese and decorate with chopped walnuts (optional). Peach kissel is done! Enjoy your meal!
