Oven-baked cottage cheese and oat waffles

Ingredients

Fluffy and tasty waffles can be cooked even without waffle irons. We suggest taking some cottage cheese and use two types or flour (rice and oat). We break the stereotypes, as waffles can make a healthy breakfast! Moreover, you can serve these waffles with sweet toppings, e.g. fruits or jam, and savoury, such as some salad or tuna. Try and don’t be afraid to experiment!

Prepare the ingredients. Preheat the oven to 180°C.

Combine both the flours with the baking powder, so that there’re no lumps.

In a bowl combine the cottage cheese with the egg. Mix till homogeneous. If you want, add some vanilla extract.

Add the milk, butter and flour mixture. Mix thoroughly till homogeneous.

Put the silicone waffle forms onto a baking sheet and fill with the batter.

Bake in the middle of the oven till golden, 15-20 mins.

Tips:

These waffles are sugar-free but they are a bit sweet from the grains. If you prefer sweet bakings, add 10-15 g sugar to the batter.
