Ingredients

Orange roasted carrots are a light dish full of vitamins and perfect for a spring diet. If you love sweet-and-tangy flavours, you will like this carrot recipe. Due to roasting without oil, this would be a nice Lenten dish. Orange roasted carrots can also be a light vegetable side for meats and poultry.

Prepare the ingredients. Wash and peel the carrots, cut lengthwise in half to get maximum 2 cm thick pieces (if necessary). Thoroughly wash the orange. Preheat the oven to 160°C.

Peel the thin orange layer from the orange in wide stripes. Squeeze the juice out of the orange.

Combine the mustard, honey and orange juice and pour this mixture over the carrots and zest. Mix so that the marinade covers all the carrots. Reserve 2 thyme sprigs for serving, remove the leaves from the remaining ones and combine them with salt and pepper. Put the carrots into the baking form and sprinkle with the thyme mixture.
