Onion & avocado cream soup

Ingredients

Very intriguing and piquant, onion & avocado cream soup is definitely standing out from many other ordinary soups. This is in many ways because of the radish which gives a wonderful spicy touch. Due to the usage of dairy-free cream, the soup can be a good choice for vegans and those who are fasting.  Important: you should use only the ripest avocado. If your avocado is not ripe enough, leave it at room temperature near some other fruits, e.g. apples or bananas. This will speed up the mellowing.

Prepare the ingerdients.

Peel the onions and garlic. Slice the onions and leeks (white part only), mince the garlic using a garlic press. Peel the potatoes and cut them into cubes.

Heat 1 tbsp vegetable oil in a saucepan, add the vegetables and fry them, constantly stirring, about 4 mins. Be careful not to burn the vegetables, or the soup will taste bitter. Pour 1 l hot vegetable stock and cook 15-20 mins until the potatoes are soft.

Remove the skin and the stone from the avocado. Cut the pulp of 2 avocados into cubes.

Add the avocado and cream to the cooked vegetables and puree with a blender. Then put it back to heat and bring to a boil, constantly stirring.

Remove the soup from heat, add 2 tbsp lemon juice, salt and ground black pepper, stir everything up.

Cut the remaining avocado into 8 segments, sprinkle with lemon juice. Cut the radish into thin slices. Decorate the soup with the radish slices and avocado segments, sprinkle each portion with ½ tbsp olive oil. Serve hot.
