Lenten pitas with corn flour (churek)

Ingredients

Satisfying flatbreads of Caucasian origin are usually cooked with sour dairy. But a slightly different technology helps even Lenten chureks to become a healthy companion for your dinner, or a breakfast. Corn flour is rich in proteins and dietary fibers, thus making churek a good replacement for yeast bread and a way not to feel hungry for a long time. Perfect for vegetarians and those who are on Lent.

Prepare the ingredients. Sift the fine corn flour, peel and dice the onion, wash the greens and cut not too finely. Bring to a boil 300 ml water.

Combine the sifted flour with salt and baking soda using a spoon or a whisk.

Pour the boiling water, mix carefully and cover the bowl with a towel. Leave for 20 mins.

Meanwhile, sauté the onion with a little oil for 4-5 mins.

Add the onions and greens to the dough. Mix well.

Divide the dough into 6 parts and shape 6 flatbreads. If the dough is somewhat runny, spoon in onto a pan and use a spoon to shape flatbreads, not too big to make them easier to turn over. Heat the pan over medium heat. Cook in a dry pan.

Fry each churek 3-5 mins on each side. Turn over carefully.

Tips:

1. If you are not having a Lent, you may use kefir or milk instead on water.
2. Chureks may be cooked with some vegetable oil. Add a little onto a pan before frying.
