“Lemon wedges” cookies

Ingredients

It’s not easy to find a person who doesn’t like lemon cookies. Everyone likes nice lemon flavour and sweet crunch. Lemon cookies are a good way to raise your spirits and treat your guests to a nice and quick dessert. Sourish lemons and sweet batter make a great combination. We recommend trying this treat with a cup of black coffee. It is very easy-to-make, and inside each cookie you’ll find a surprise – candied lemon wedge! Just as the name suggests!

Prepare the ingredients. Wash the lemon, cut into quite thin half- or quarter-wedges, sprinkle with 1 tbsp sugar and mix carefully. Preheat the oven to 170°C.

In a bowl combine the eggs with sugar.

Whisk the eggs with sugar till thick foam.

Gradually add the sifted flour, 1 heaped tbsp for each go.

Mix the batter till homogeneous. It should resemble sour cream (15%).

Layer a baking sheet with parchment. Spoon the batter onto the baking sheet, leaving some space between them. Form the circles. Bake in the middle of the oven for 7-10 mins till the egdes turn golden.

Quickly remove the cookies from the oven, put the lemon wedges in the middle of each one and fold the opposite edges making a calla flower. Work very quickly, as the cookies stick only when warm.

Tips:

You may also make fortune cookies using the same batter. Just increase the portion a little and put a not instead of a lemon wedge inside the cookie.
