Vanilla cupcakes

Ingredients

  • 100 g butter
  • 120 g sugar
  • 1 pc egg
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1,5 g vanillin
  • 200 g yoghurt
    or sour cream
  • 3 tbsp milk

  • for the cream

  • 100 g powdered sugar
  • 50 g butter
    room temperature
  • 250 g cream cheese
    Philadelphia, Hochland, President
  • 150 g condensed milk
    Dulce de Leche
  • vanilla essence

Dear chefs! Happy Valentine’s Day! We wish you to love and be loved! We have prepared for this holiday and invited a special guest who would share a recipe of wonderful treat – cupcakes. Cupcake (“a cake in a cup”) can be attributed both to cake or muffins, but that’s not them. That’s a separate and extremely delicious treat. The special feature is that it’s topped with a cream cap and other decorations. This is where you could let your fantasy go! We asked our author to tell us in details the way of making this lovely dessert so that you could cheer your beloved ones up on this wonderful day!

Preheat the oven to 356 F. Place 1 egg into a bowl, add half cup of sugar, a pack of vanilla powder (1.5 gr).

Whisk until sugar is fully dissolved.

Add a cup of yoghurt or sour cream and 3 tablespoons of milk. Stir the mixture up.

Melt 100 g of butter, cool down a bit, add into the dough and stir all together.

Add a cup of wheat flour and 1 teaspoon of baking powder.

Stir the batter until smooth.

Prepare the cupcake pan, place a paper case into each cup.

Pour batter into the cupcake pan filling the cells for ¾ each.

Into the middle of each cupcake put ½ teaspoon of Dulce de leche.

Cover Dulce de leche with a bit of dough. It will ensure the filling stays inside of the cupcake. Put into oven for 15-20 min.

Preparation time depends on the cupcake size. Check whether the cupcake is ready with the toothpick – it should come out dry.

For the cream: beat butter (room temperature) and powdered sugar.

Add cottage cheese and whip once again, you should get a thick mixture. Place it into fridge for 10 min.

Put your cream into a pastry bag using “star” tip.

You could use coloring gel to get any color for cream. Add a drop of it to the cream (I used red one, powdered food color is also fine).

Roll out red gum paste. If you don’t have special tools, you could apply a pattern using openwork napkin.

Cut out hearts with a special tool. If you don’t have it, make a layout using cardboard. Dry the shape for 10-15 min.

Make other decoration shapes if you wish. It could be flowers, little envelopes etc. It all depends on your imagination only.
