Julia Vysotskaya’s Nutella cookies

Ingredients

You will enjoy the rich chocolate flavour of these simple cookies. Just 20 mins and no heaps of dirty dishes, and you’ll have a great dessert for a morning coffee, a snack or for an evening tea. You may use this recipe as a base for your experiments. For example, use the same proportions and replace Nutella for any other chocolate paste, hazelnuts – for any other nuts, chocolate drops or dried berries.

Prepare the ingredients. Remove the butter from the fridge to soften. Preheat the oven to 200°C.

Toast the hazelnuts in the oven for 5 mins. Leave to cool slightly and remove the peel. Don’t turn off the oven.

Roughly chop some of the hazelnuts.

Whisk Nutella, softened butter and egg at medium speed. In the original recipe 50 g sugar is added. It’s up to you, but we recommend omitting it, as it will be sweet enough and have rich chocolate and nuts flavour.

Combine the flour with salt and baking powder. Add to the chocolate mixture and knead the dough.

Add the nuts and mix with your hands. Form a ball.

Divide the dough into 16 pieces and shape them in balls. Slightly flatten each of them and spread over a baking sheet layered with parchment.

Bake in the middle of the oven for 7-10 mins. The less is the baking time, the softer the cookies.

Tips:

You may use any chocolate and nuts or chocolate and cream paste instead of Nutella.
