Jamie Oliver is a master of original dishes and unusual flavor combinations. Today we suggest trying this piquant turkey salad using a recipe by this great British chef. Caramelized turkey, pine nuts cranberries and lots of bitterish rocket salad together make a harmonious combination finished by an unusual dressing. Wash the turkey, pat dry and remove all the fat and pellicle if necessary. Slice thinly broadwise.

Heat a pan well and fry the turkey slices over medium heat (without any oil). It should be preferably done in several portions, so that the meat is fried and not stewed. Transfer the turkey to a plate.

Return the turkey to the pan, add the cranberries (washed and dried) and pine nuts. Add the cinnamon, paprika, ginger and pepper, mix everything well. Cook for about 2-3 mins, taking care that the meat doesn’t burn.

Add the honey and mix everything up, so that the honey covers all the turkey slices. Cook for 1-2 mins and remove from heat.

Wash and drain the rocket salad, dill and parsley. Remove the hard stems and finely chop the leaves. Combine the greens in a bowl.

Make the dressing. Grate or finely chop ½ small onion.

Squeeze 1 tbsp juice out of the tangerine and all the juice from ½ lemon. Combine the juices in a bowl and add the onion, olive oil, mustard, soy sauce and pepper.

Mix everything till emulsified.

Transfer the greens into a salad bowl and pour with 2/3 dressing. Mix well.

Tips:

1. You can substitute Iceberg salad, chicory or salad mix for rocket salad.
