Ingredients

A very simple, quick, satisfying and delicious pie. A lot of filing and a thin crunchy pastry layer make your meal festive, though effortless and quick. If you have a enamel form, you may use minimum dishes. One more advantage is that both the filling and the pastry can be cooked in advance and stored in the freezer.

Step 1

Prepare the ingredients. Dice the chicken breasts, finely chop the spring onions, blanche the mushrooms and drain them. You may also use 150 g fresh mushrooms. Combine the yolk and milk for brushing and set aside. If the pastry is frozen, defrost it in advance.

In a deep frying or sauté pan fry the chicken with the olive oil for 4-5 mins. If you have an enamel form, you may cook the filling in it.

Add the pepper, salt and thyme, then the onions and mushrooms. Add the butter, stir and cook for 5-6 mins.

Add the flour, sour cream and mustard and mix. Add the stock, mix and cook for 15 mins.

Preheat the oven to 200°C. Transfer the filling into a baking form (we used a 20 cm). If you cooked the filling in it, omit this step.

Roll the pastry or stretch slightly. Cover the form with the pastry, seal the edges and decorate them (optional). Brush the pie with the egg and milk mixture.

Bake in the middle of the oven for 15-20 mins.
