    Preheat the oven to 170°C. Remove the butter from the fridge to soften. Set aside 40 pcs almonds (not roasted) for decoration. Grind the remaining almonds in the blender or a coffee mill. To make the process easier, put the almonds into freezer for 5-10 mins and also peel them to have a lighter and more delicate cookies. In a bowl combine ground almonds, a pinch of salt, flour, icing sugar, vanilla sugar, egg and butter.

    Mix the ingredients with a fork or a mixer. Use your hands to knead the dough and combine all the ingredients.

    Layer the baking sheet with parchment or silicone mat. Make walnut-sized balls.

    Press a whole almond into each ball and bake for 10-15 mins.
