Prepare the ingredients.

In a big bowl combine the dry ingredients, i.e. sifted flour, yeast, sugar and salt.

Bring the milk almost to a boil. Add 10 g butter and let it melt completely. Add the water to the milk. The liquid mixture you’ll get should be warm, not hot.

Combine the dry and liquid ingredients, mix thoroughly. Let sit for 10 mins, then knead the dough with your hands or a hook appliance of the mixer.

Form a ball, put it into a bowl greased with some oil and cover with a cling film. Leave in a warm no-draught place to rise.

The dough will increase its volume 2-3 times.

Press the dough down and transfer to the working surface dusted with flour. Divide into 3 equal balls and leave them, seal down, covered with a towel, for 5 mins.

Turn each ball upside down and roll with a rolling pin. Fold both edges to the centre, so that one slightly covers the other and roll again.

Form a roll. Repeat the procedure with the two remaining bowls.

Put the rolls into a rectangular cake form (slightly greased with some oil and dusted with flour). Cover with a cling film and leave for 1 hour to rise.

Preheat the oven to 190°C. Brush the dough with some milk at room temperature an dust lightly with some flour before baking.

Bake in the middle of the oven for 35 mins and let cool on a rack.
