Herring in furs is one of the favourite salads associated with New Year and childhood. But there’s a reason to reinvent it. Avocado will add some nice texture; fresh cucumber will give a new flavour and the home-made mustard sauce will unite all the flavours together and make the salad really special!

Prepare the ingredients. Boil the potatoes, carrots, beetroot and eggs and peel them. Peel half an onion.

Make the sauce: whisk the cold cream till stiff and combine carefully with mustard, olive oil and the seasonings.

Roughly grate the potatoes and spread over a serving dish. Cover with some mustard sauce.

Cut the herring and onion into small cubes. Layer the herring on top of the potatoes, then continue with onion.

Peel the avocado and cut into small cubes. Put onto the onions and spread with some sauce.

Finely grate the carrots and layer onto the avocado. Spread with some sauce.

Peel the cucumber and cut into small cubes, put onto the carrot layer.

Finely grate the beetroot and top the salad with it. Spread the sauce over the top.

Tips:

To speed up the boiling of the vegetables, put them into a plastic bag and tie it up well. Put the bag into the microwave for 10 mins (for carrots and potatoes) or 15 mins (for beetroot). In both cases cook at maximum power.
