Ghapama — stuffed pumpkin

    Ingredients

    Have you ever tried a sweet pilaf? Nope? We would then suggest you to make an Armenian dish – ghapama. It’s a pumpkin stuffed with rice and dried fruits, amazingly delicious and flavored. It would definitely decorate any table. And you could make the filling in advance so that if there is a guest visit awaited, you would simply need to stuff the pumpkins and put them into oven.

    Wash raisins and dried apricots, cut apricots into pieces. Place dried apricots, dried cherries and raisins into a bowl, pour with whisky or brandy. Put aside for an hour (actually you could soak the dried fruits in advance and keep in fridge).

    Pour a glass of rice with 1.5 glass of water, cook until the water is completely evaporated and stir well.

    Mix rice with dried fruits, remained whiskey and 45 g of honey in a bowl.

    Peel apple, remove seeds, cut into cubes and pour with lemon juice (throw out the squeezed lemon). Combine and stir a full teaspoon of cinnamon, apples, rice and dried fruits.

    Preheat oven to 340 F. Cut a cap out of the top of pumpkins, set them aside. Cut a circle around the top of pumpkin with a sharp knife, stepping 1.5 cm aside from the edge.

    Clear away the seeds and flesh from inside the pumpkin. If you get too much flesh, you could put it in a plastic bag and freeze it for any further recipes.

    Rinse the pumpkins with water, brush with oil from inside and outside. Fill up to 2/3 with a rice stuffing (don’t put more – the filling will increase while being baked). Put a tablespoon of butter on the top of the filling.

    Brush the cake pan with vegetable oil, place the stuffed pumpkins there and cover them with caps. To avoid pumpkins' tips to be burnt, wrap them with foil.

    Place into the preheated oven for 1 hour.

    Try the rice in an hour – if you feel it’s not sweet enough, add ½ tsp of honey into each pumpkin and bake them for another 30-40 minutes.

    Tips:

    1. If you plan to cook 1 large pumpkin, you would likely need more time for it.
    2. You could add cherry-plum, quince or nuts into the filling.
    3. If you want to make a stuffing sweeter, mix honey with warm water and serve in a sauce boat – everyone will be able to add honey to taste.
    4. You could make the apples in the same way, but the rice should be fully cooked prior to being mixed with dried fruits. The apples are cooked in 30-40 min.
    5. If you have some filling left, you could simple bake it in individual mini cake pans (cover them with foil before placing into the oven).
