Glass noodles with champignons and cucumber

Ingredients

There’s no universal recipe to cook glass noodles. You can combine them with any vegetables, both fresh or fried, add meat, fish, seafood or mushrooms to taste. Try out one of the ways to cook vegan glass noodles with little heat treatment. It will take little time as you don’t have to boil the noodles. Just add some boiling water, and the noodles are done in several minutes.

Prepare all the ingredients. Wash the cucumber and parsley, peel the champignons and garlic.

Slice the champignons 1 cm thick, thinly slice the garlic.

Grate the cucumber or cut it thinly with a knife.

Boil the water and pour it on the noodles, leave for 2 mins or follow the instructions on the pack. When the noodles are done, pour off the water.

Fry the champignons in a non-stick pan over high heat, about 1 min per side. Do not add any oil, this will help the mushrooms keep their juices and their natural taste.

Discard the parsley stems, roughly chop the leaves. Combine the parsley, garlic and cooked mushrooms. In a sauté pan heat the oil for 1 min, then pour it on the vegetables. Mix.

Put the noodles into a bowl, add the vegetables, the soy sauce, the wine vinegar and mix carefully. Adjust the proportions of soy sauce and vinegar to your taste. Serve in portions.
