It all began with gingerbread: they began to get better, she wanted to shoot them on a technique more professional than a digital soap box. Irina got on courses on a food photo, and it was hooked! For the practice of shooting it was necessary to shoot something every day - so, she was carried away by cooking. Prepare and weigh all the ingredients. Combine the flour with the baking powder and sift. Remove the butter from the fridge in advance, so that it is at room temperature. Preheat the oven to 170°C.

In a deep bowl combine the yogurt, vegetable oil, vinegar and vanilla extract. Set aside.

Separate egg whites and yolks. Whisk the whites with a pinch of salt till soft peaks. They should be airy and runny.

Go on whisking and adding the sugar in portions. Whisk till stiff. Add the yolks one at a time, whisking after each go.

Add the prepared yogurt mixture, whisk.

Set aside 1 tsp flour, and in portions add the remaining flour to the batter. Use a spatula to carefully mix it. The mixture should remain fluffy. Separate 5 tbsp batter and add the reserved flour. Mix, transfer to the pastry bag. It will help to balance the density of the batters, as we will add cocoa powder to another batch.

Sift the cocoa powder into the reserved batch, mix.

Cut the tip of your pastry bag. You need a small hole. Pipe the white batter on a mat or parchment in a giraffe-pattern, or another pattern to your taste (e.g. snowflakes). Bake in the middle ofthe oven for 2-3 mins.

Make the cream: The cream and cottage cheese should be cold. The butter should be soft and at room temperature. Whisk the cream, cottage cheese and butter with a mixer. Add the vanilla extract and icing sugar, whisk for several minutes more. Carefully unroll the cooled sponge, spread the cream over the inner part in an even layer.
