Step 1

Prepare the ingredients. Remove the butter from the fridge in advance to soften.

Whisk the softened butter with the eggs and sugar till homogeneous, 3-5 mins. Add the cocoa and baking powder and whisk till homogeneous, 3-5 mins. Gradually add the flour as quickly as possible so that the dough doesn’t get too tough. It should be quite thick as it will be rolled.

Shape the dough into a disc, wrap into a cling film and refrigerate for 30 mins.

Grease a baking form (we used a 20 cm and 6 cm high) with some butter. Remove the dough from the fridge, separate 1/3 of it and set aside. Roll the bigger part into a circle 5-6 cm more than the diameter of the form. Transfer the dough into the form and evenly press the dough into the bottom and up the sides of the form. Cover with a cling film and put into a freezer for 20 mins.

Preheat the oven to 180°C. In a bowl combine all the ingredients for the filling, i.e. cottage cheese, sour cream, both the sugars, eggs, salt and cornstarch. Use a blender to whisk everything till homogeneous. The mixture will be quite fluid. Remove the crust from the freezer and fill with the cottage cheese mixture. Pat the form slightly onto the table so that it spreads evenly.

Tear the reserved dough into pieces of different size and top the pie for decoration.

Slightly press the smaller dough pieces into the filling, so that you have a nice pattern inside.

Spread the bigger “spots” over the top of the pie.

Bake in the middle of the oven for about an hour. Let cool in the form. Use two plates to remove the pie from the form, i.e. cover the pie with one plate, turn over, cover with the second plate and turn over again. Remove the first plate.

Tips:

1. You can substitute flour or semolina for cornstarch.
2. If you don’t have baking powder, omit it.
