Gibbery is a famous Russian pastry. Today we’re sharing a family recipe with you, which will become a real lifesaver for you, too.  It’s so easy to cook, with minimum of your participation in the process. And, moreover, it gives a great opportunity to get rid of any jam rest.

Prepare the ingredients.

Mix 300 g (1 cup) of jam and 1 tbs soda in a large bowl, leave for 30 min. The mixture should become fluffy and smooth. Meanwhile chop the nuts into big pieces and take cream and eggs out of fridge and bring them to room temperature.

Preheat oven to 356 F. Add cream and eggs into the bowl with jam and stir thoroughly.

Sift flour in the bowl, add nuts and stir quickly until the ingredients are evenly combined.

Grease baking pan (22 cm) with butter and flour it lightly. Pour in the dough, make it even. Bake in the middle of the oven for 35 min. Check the readiness with the toothpick, it should come out of the middle of the gibbery dry.
While the pie is baked, make the glaze: squeeze 1tsp of juice out of the lemon. Mix all the ingredients in a roasting pan and place it over medium-high heat. Constantly stirring the mixture, cook it until boiling (about 7-10 min) or the powdered sugar is fully dissolved. Set aside and leave to cool down.

Get the ready gibbery out of the oven, leave it in the baking pan for 5 min, then remove and cool on the grid.

Pour the glaze on the top of the gingerbread with jam and decorate it according to your taste.

Tips:

  1. You can use any nuts and dried fruits in this recipe. It all depends on your taste.
