A galette is the most convenient and tasty pastry with many variations of dough and filling. Today we propose you tender dough with corn flour and the smell of ground paprika. As for the filling, we suggest you try a very tasty combination of cottage cheese, basil and fresh tomatoes. You can make the galette even more beautiful by using tomatoes of different colors: red, green, yellow. If you don’t have the corn flour we recommend you to use the recipe ‘Rye galette’ (see ‘Lenten menu’), excluding cinnamon from it.

A galette is the most convenient and tasty pastry with many variations of dough and filling. Today we propose you tender dough with corn flour and the smell of ground paprika. As for the filling, we suggest you try a very tasty combination of cottage cheese, basil and fresh tomatoes. You can make the galette even more beautiful by using tomatoes of different colors: red, green, yellow. If you don’t have the corn flour we recommend you to use the recipe ‘Rye galette’ (see ‘Lenten menu’), excluding cinnamon from it.

For the dough sift the flours, add ground paprika, salt and mix all the ingredients. Combine warm water and the vegetable oil, and add them to the flour mixture. Make the dough smooth. If it sticks to your hands pour some water or oil on them and make a ball from the dough.

Wrap the dough in a plastic wrap and refrigerate 20 minutes.

Cut basil leaves from a thick stem, then rinse and chop them. Mix cottage cheese, basil, black pepper and salt in a bowl.

Wash tomatoes and slice them (if you have cherry tomatoes then just cut them in half).

Preheat oven to356 F degrees. Take the dough out of the fridge, cut into two parts and unroll each part between the two layers of parchment paper into a 23cm circle (you can cut the sides).

Spread the filling in the center of each galette, leaving a 4cm border. Arrange tomatoes over the filling and salt all a little bit.

Fold the dough over the filling toward the center. Carefully lay galettes on a baking tray with the parchment paper.

Bake in the center of the oven for 20-30 minutes.

Tips:

1. If you don’t have tomatoes at home, put more cottage cheese and add different fresh herbs: dill, cilantro, green onions and etc.

2. For this galette you may also use the rye dough (this recipe is in the section “Lenten menu” ), you can replace cinnamon with khmeli-suneli or just skip it.
