Love fritters and have been searching for the recipe for the yeast ones from your childhood that your granny used to cook? Here it is! The fritters used by this recipe are really tasty and fluffy. They may be served with sour cream, jam, honey etc. The recipe was taken from the magazine “Gastronom. Favourite crepes, fritters and pancakes”.

Prepare the ingredients.

Heat the milk till 40°C. Crumble the yeast in a separate bowl and add 2 tbsp lukewarm milk. Mix till homogeneous.

Sift the flour into a big bowl and mix with vanilla sugar and salt. Gradually add the milk and the yeast mixture, make the dough. Cover the bowl with a cling film and leave in a warm place for 40 mins. Remove the eggs from the fridge so that they are at room temperature.

Melt the butter and set aside to cool to room temperature. Whisk the eggs with a fork till homogeneous.

Add the eggs and butter to the risen dough, mix well. Cover the bowl with a cling film and leave in a warm place for 1 h.

When the dough is risen, mix it up and leave at room temperature for 10 mins.

Grease a pan with some oil and heat well. Spoon the dough onto the pan, 1 tbsp per each one, leaving some space in between.

Fry the fritters over moderate heat on both sides till golden.

Transfer the fritters to a warm serving plate, keep warm. Serve hot or warm.

Tips:

Fritters are usually cooked with a lot of oil, but they may also be cooked on a dry pan greased with a little oil before the first go. This will help to reduce the fat but the fritters will remain tasty!
