Prepare the ingredients.

Slightly cut the pork into 1 cm layers, similar to accordion (don’t cut meat through, the pieces should not be separated from each other). Squeeze 50 ml of lemon, mix with wine, spices and salt in a large bowl. If you prefer a juicy meat we would then recommend you to take a boneless neck, if you want to get a lean meat – choose loin.

Place pork into the bowl. Cover with plate and leave marinating for 2 hours at room temperature. If marinade is not covering pork fully – turn the meat over every 20 minutes.

Preheat oven to 356 F. Line the roast pan with foil that is large enough (you could use the baking sheet instead). Pull the pork out of marinade, dry out with a paper towel. Cut the pear into thin rings or half rings, put a slice of pear into meat slits and wrap pork into foil. Close the foil tightly so that steam doesn’t come out.

Bake at 356 Ffor 1 hour 15 mins, then half-open the foil and bake for another 25 min until golden brown.

You could cook chicken or turkey fillet in the same way instead of pork adjusting the cooking time.
