Finnish rye flatbreads

Ingredients

These Finnish rye flatbreads are made without and wheat flour or eggs. Also a bit of honey is added to the dough instead of sugar. These flatbreads are a perfect match for a plate of hot soup.

In a bowl combine kefir, honey and oil. Add cottage cheese (preferably low-fat) and whisk thoroughly.

In a separate bowl combine 200 g sifted flour, salt and sugar, mix.

Add the flour to the cottage cheese mixture and make soft non-sticky dough. You may need some more flour, but don’t add too much, or the dough will be tough. Wrap the dough in a cling film and refrigerate for 15-20 mins.

Preheat the oven to 356 F. Dust your working surface with the remaining flour and roll out the dough. It should be about 1 cm thick. Use a glass or any round cutter to cut out the flatbreads.

And if you roll the dough a bit thicker and use bigger cutters, these flatbreads will make a good and healthy alternative for sandwich bread.

Transfer the flatbreads to the baking sheet layered with parchment. Pierce each flatbread with a fork, so that they would rise evenly while baking. Bake 25-35 mins, depending on your oven. The flatbreads are done when doubled in size and have a nice golden crust.
