    Ingredients

    Beer crepes are a real compromise for those who like yeast blins but don’t have enough time to cook them. Unlike yeast blins, beer crepes take less time to make. Choose some good beer as the result depends a lot on the quality and taste of the beer. You won’t feel alcohol in your crepes but the hop and malt flavours are distinctive, so we don’t recommend treating little children to them.

    Step 1

    All the ingredients should be at room temperature, so remove them from the fridge in advance. Whisk the eggs with sugar and salt till fluffy. Continue whisking and gradually add the sour cream.

    Add half of the beer into the egg mixture and mix. Add both the flours, mixing all the time. Mix thoroughly so that you have no lumps. Pour the remaining beer and mix again. You will have a kefir- consistency batter.

    Add the vegetable oil and mix. Cover the bowl with a towel and leave for 20 mins.

    Heat a non-stick pan well and brush it with a little oil. Use a ladle to pour the batter onto the pan (about 2/3 of the ladle per one crepe) and swirl the pan quickly so that the batter covers the bottom. Fry over medium heat for 1 min.

    Turn over the crepe and fry till cooked. Transfer to a plate. Repeat the procedure for the remaining batter (which is enough for 14 crepes 18 cm in diameter). Dark beer crepes are done! Serve with sour cream, cream cheese, redfish or caviar. Enjoy your meal!
