Curd and cheese mousse with apples

Ingredients

If you want to surprise your guests with something original, make this curd and cheese mousse with apples. Salty feta, neutral curd, sweet apples and slightly bitter olive oil – you guests are going to remember this combination. The mousse will complement any veg board or will work well as a small tartelette filling.

Wash to medium apples, cut in halves and remove the core. Put the apples onto a plate, flesh-side down, and microwave at full power for2-3 mins. When the apples are soft, let them cool slightly.

In a blender bowl combine feta, curd, olive oil, cold filtered water and honey. Whisk till homogeneous.

Remove the soft apple flesh without the peel and add it to the mousse.

Whisk again till smooth. If the mousse is too thick, add a little water.

Refrigerate the mousse before serving for at least 1 hour.

Tips:

If you substitute ricotta or cream cheese for feta and omit the olive oil, you’ll get a nice dessert that can be served with fruit or as a filling for crepes.
