Crepe rolls with meat and napa cabbage

Ingredients

This recipe will help you to make a simple and satisfying appetizer or light dinner.  Crepes rolls are a multi-purpose dish. We suggest adding any meat filling to your taste, e.g. ham, boiled ham or meat and complementing it with bright napa cabbage and cottage cheese cream.

It all began with gingerbread: they began to get better, she wanted to shoot them on a technique more professional than a digital soap box. Irina got on courses on a food photo, and it was hooked! For the practice of shooting it was necessary to shoot something every day - so, she was carried away by cooking. Every day she learns something new: both the possibilities of her camera, and new dishes!

Step 1

Prepare and scale the ingredients. Sift the flour. You may make the crepes either with butter or with oil. You may also use ham instead of boiled ham.

Heat the milk till warm, pour into a bowl for the batter. Add the eggs and salt.

Add the flour in portions, mixing thoroughly to break any lumps. Add 50 g oil, mix. The batter should be runny. Set aside for 30 mins.

Heat the pan well, grease slightly before starting cooking. Pour a ladle of the batter and swirl to let it cover the bottom. As soon as the edges turn golden, turn the crepe over and fry1-2 mins more.

Repeat the procedure for the remaining batter.

Shred the napa cabbage.

Blanche the cabbage, i.e. plunge in boiling slightly salted water for 2 mins. Pour off the water and spread the cabbage over paper towels.

In a separate bowl combine the cottage cheese, sour cream or yoghurt, mayonnaise and ground pepper.

Reserve some scallions for decoration. Finely chop the rest and add to the sauce. Add the lemon juice and salt to taste. Mix.

Plunge the reserved scallions into boiling water for 1-2 mins, remove.

Slice the meat or ham. Put 1-2 slices ham onto a crepe, spread the cottage cheese on top, top with napa cabbage and make a roll.

Cut each roll in half diagonally, tie with a scallion. Crepe rolls with meat are done. Enjoy your meal!
