A crepe cake is one of the most famous cakes which can be called a Russian dish by right. It is not just easy-to-make (as you don’t need to be a skilled pastry chef or even have an oven) and at the same time delicious, but also budget-friendly. It requires few ingredients, and all of them are available for everyone.

Prepare the ingredients.

Make the crepe batter. Sift the baking soda, flour and cornstarch in a bowl, add 400 ml warm water and mix till homogeneous.

In a separate bowl combine the sour cream, 1,5 tsp salt, sugar and oil. Mix well till homogeneous.

Add the sour cream mixture to the flour one and mix well. Add the 2 eggs, mix till homogeneous. Set aside for 20 mins.

Grease the pan slightly with some oil and heat well. Fry crepes (about 16 cm in diameter) over medium heat.

Transfer and pile the cooked crepes onto a plate.

Make the cream. In a bowl combine the cream and chocolate, melt in the microwave, checking after each 5 seconds and mixing well after each check. Usually about 20 seconds is enough. Mix the chocolate and cream well to get a dark chocolate ganache.

Transfer the ganache to the mixer bowl, add the icing sugar and cottage cheese. Whisk till homogeneous.

Put one crepe on a plate and spread some cream over it. Cover with the second crepe and continue with another layer of the cream. Go on assembling the cake this way.

Spread the cream over the top and sides of the cake and decorate to taste. Refrigerate for 2 hours.
