What is the mystery behind the magical word “terrine”? It is a quite simple and at the same time delicious treat, something like a casserole and pate at the same time. It may be cooked from meat, fish, poultry and vegetables. Mr Terrine has lots of variations, and today we will discover one of them together. Cream cheese and salmon terrine does not require baking, that is why it is a perfect appetizer for both everyday and festive table. You will also appreciate it for the simplicity!

    Prepare the ingredients.

    In a bowl combine cream cheese and sour cream (fat content 15-20%), generously sprinkle with lemon or lime juice. Season to taste, stir.

    Peel the cucumber and ½ of the ripe avocado, dice finely. Cut the capers in half. Wash and finely chop the herbs and onions.

    Add the prepared cucumber, avocado, capers and herbs to the cream cheese. Stir till the mixture resembles a homogeneous pate.

    Prepare 2 serving plates. Put a ring on one of them and put ½ of the pate into it.

    Even the pate with a teaspoon and carefully remove the ring. Repeat the procedure for the second portion.

    Slice the salmon very thinly. Wrap both terrines around with salmon slices. Decorate with a generous portion of frisee and lollo rosso leaves.

    Tips:

    1. You may also use rocket salad leaves, or any other leaves to your taste.
    2. You may use pickled cucumbers or olives instead of capers.
