Wash the tomatoes and cut in halves. Wash and roughly chop the spinach leaves. If you are using frozen spinach, defrost it in advance and discard all the liquid.

Peel and mince the garlic. Heat the oil in a pan over medium heat, add the garlic and cook for 2 mins. Do not wait till golden, remove the pan from heat as soon as the garlic is fragrant.
