Cottage cheese crepes with herbs

Ingredients

Cottage cheese yeast-free crepes are soft, delicate and flavourful. You can exclude the herbs or choose some to your taste. The crepes don’t have any specific flavour but nice cottage cheese touch, so we recommend serving them with some savoury fillings.

Step 1

Remove the cottage cheese, kefir and eggs from the fridge in advance, so that they are at room temperature. Put the cottage cheese through a sieve or use a blender to make it homogeneous. In a bowl combine the cottage cheese, eggs, sugar and salt. Mix everything well.

Wash the herbs, shake off the excess liquid and finely chop them. Add to the batter. You may adjust the amount and the type of herbs to your taste.

Add the kefir, mix. Sift the flour in parts, then a heaped tsp baking soda. You may need more or less flour depending on your cottage cheese, the size of the eggs and the quality of the flour. We used 330 g.

Mix well and make sure that there’re no lumps. The batter should resemble whipping cream.

Heat a frying pan over medium heat, grease with a little oil (repeat this step before each crepe). Pour some batter and swirl so that it covers the bottom. When the batter is set, turn over and fry till golden.

Melt the butter and put the crepes in a stack, buttering each crepe.
