Cookie christmas tree is a wonderful choice for a sweet gift to give to your friends and family. Children will gladly help you make it, together you can share the joy of creating something and have a lot of fun while New Year season is coming. Feel free to experiment with the dough (for instance, add any winter holiday spices to boost the flavors or use your favorite gingerbread recipe).

Take the butter out of the fridge beforehand and leave to warm up to room temperature.

Mix the butter, 2 tablespoons of sugar, vanilla sugar, baking powder, corn starch and flour. Finely grate zest of ½ lemon (yellow layer only), add to the flour, knead to form smooth dough. If the dough does not come together enough to form a ball, then add 5 g of butter.

Wrap the dough in clingfilm and refrigerate for 30 minutes.

Preheat the oven to 392 F. Dust the working surface with icing sugar, roll out the dough and cut out stars of graduate diameters (you can use ready-made cutters or draw and cut the patterns yourself , the biggest star should be 10-15 cm in diameter). The thinner the dough is rolled out, the firmer the cookies are going to be. Drip a few drops of water onto baking tray, line it with baking paper, place the cookies there and bake on the middle self of the oven for 10-15 minutes until golden.

Remove the cookies from the oven and leave to cool. Meanwhile, prepare the icing: using mixer whisk the egg white until thick and fluffy, gradually adding the icing sugar and a few crystals of the citric acid. You can make icing of different consistencies. If you intend to draw fine outlines, the icing should be thick. To cover the Christmas trees with frosting use thinner icing, its layer will be more airy. If you intend to use icing of different colors, then divide it into several portions and stir in the intended coloring in each one. Use separate decorating bag for each color.

Arrange the stars according to the size and squeeze a little bit of icing into the center of each one. To assemble the tree just build a pyramid by placing one cookie on top of another one, starting with the largest star as a base and placing the smallest one on the very top. Tip: while assembling the tree, turn each star around a little bit so that tips of the closest cookies were not aligned, then the tree will be beautiful and furry.

You can decorate 2 upper cookies as you like, or just flood them with icing. Turn the top star upright and hold it this way for a bit for icing to set. You can decorate it with colored icing to make it look even lovelier.

Tips:
