Cold strawberry dessert with honey

Ingredients

If you want something cold and light in these hot days, do try out this strawberry dessert.  The recipe is developed by Liza Glinskaya, the winner of Masterchef, who calls it strawberry parfait. The dessert is delicate, delicious and truly summerly.

Step 1

Prepare the ingredients. Wash the strawberries well.

Puree the strawberries with a blender. Alternatively, put them through the sieve to remove all the seeds. Separate the egg whites from the yolks.

Arrange a bain marie. Pour some water into a small pan, heat the water over medium heat and put the bowl with the yolks over the pan. Check that the bottom of the bowl doesn’t touch the water. Stir the yolks energetically and constantly to achieve homogeneous texture and a paler colour, 1,5-2 mins. Mix energetically to prevent the yolks from curdling. Set aside.

Whisk the whites with a mixer till thick and stiff. Add the clear honey and whisk again.

Add the cooled yolks to the strawberry puree and mix. Fold in the yolks carefully till airy and homogeneous.

Whisk the cold cream till stiff, i.e. no more runny but increased in volume.

Carefully add the whipped cream into the strawberry mixture.

Mix carefully till combined.

Pour the mixture into glasses and refrigerate for 2-3 hours till stabilized. Cold strawberry dessert is done! Enjoy your meal!
