Coffee crepes a la tiramisu

This is a great breakfast or dessert of real coffeeholics that can’t imagine themselves without this drink. Milk and flavoured coffee is the original base for the crepe batter. Due to the whipped egg whites, the crepes are very thin and delicate and have crusty edges. The mascarpone cream complements the taste of the crepes and the dessert resembles tiramisu.

Prepare the ingredients.

Heat the 200 ml milk in a sauté pan, add the instant coffee and mix till dissolved. If you use coffee beans, you should flavour the milk in advance. To do this, heat the same 200 ml milk with the coffee beans and leave overnight. You can sieve the milk before making the batter, and then weigh the former. If you have less than 200 g, add some milk. The crepes made with coffee beans are not so dark in colour but still have the coffee flavour.

Separate the eggs. Whisk the yolks with the sugar till pale.

Add the yolks and flour and salt mixture to the coffee milk, mix, and then add the remaining milk (300 ml) to the batter. Mix till homogeneous.

Whisk the egg whites will stiff and gradually add to the batter, mixing carefully after each go. Finally, add the vegetable oil. The batter should be liquid.

Heat the frying pan over high heat and grease slightly before frying the first crepe. Pour some batter onto the pan and swirl so that it covers the bottom. Fry for 1,5-2 mins, then turn over. Stir the batter from time to time while the crepes are being fried.

For the cream, combine the heavy cream, mascarpone and icing sugar and whisk at high speed of a mixer till homogeneous and fluffy (5-7 mins).

Spoon 1-2 tbsp cream to each crepe and spread in over a half of it.
