    Cinnabons are world-famous cinnamon rolls. 28 years ago two people decided to find the best ever recipe of cinnamon buns. They spent much money, time, efforts and inspiration, but finally they made it – and today only in Russia there are over 120 “Cinnabon” cafes. We suggest you to make these buns yourself and treat your beloved ones with this wonderful pastry!

    Prepare the ingredients.

    Take an egg, milk and butter out of the fridge prior to making. For the dough: melt 60 g butter in a microwave, let it cool down a bit. Sift flour into a bowl, add salt, sugar, yeast and stir up. Warm milk up to 104-108 F and add into the bowl together with egg and butter. Knead dough until smooth. Once ready, moisten hands with warm water and knead the dough once again. Cover the bowl with towel and leave in a warm place for 1 hour.

    In an hour the dough will grow 2-3 times in size. Flour your work surface, place the dough onto it and punch down slightly.

    Roll out the dough into a 50x40 cm rectangle (important: since dough keeps much air work gently with it).

    Set aside a small piece of butter to grease the pan later. Melt the remainder and brush the dough.
    Prepare filling to taste:
    1. Cinnabons with cinnamon: 50 g of brown sugar mix with 20 g of ground cinnamon.
    2. Chocolate cinnabons: 50 g of brown sugar mix with 20 g of cocoa powder.
    3. Cinnabons with nuts: sort the nuts, chop into medium pieces, spread over the dough and pass a rolling pin over the entire surface. Top it with a mix of 50 g brown sugar and 20 g ground cinnamon. Spread the filling evenly over the dough surface, leaving 1.5 - 2 cm of the far wide edge of the rectangle free. Roll the dough into a tight roulade starting from the nearest wide edge.

    Fix the seam of your roll by hands and cut into 12 equal parts.

    Grease 20x25 baking pan with butter and lay out the Cinnabons so that there is some space between them as they will be growing in size significantly. Place the buns into oven preheated to 122-131 F for 20 min. Then increase the temperature up to 350 F and cook Cinnabons for 25 minutes until golden brown.

    Combine cream cheese with powdered sugar and lemon juice and blend or beat with mixer until smooth. Glaze hot buns, let them cool down a bit and glaze again.
