Simply shape these delicious cottage-cheese cookies as Christmas trees and here you have something interesting to entertain your kids with, and something tasty they would be eager to taste. Every mom knows how hard it could be to feed at least some cottage-cheese to her kids, but no choosy-picky one will turn down such a sugary Christmas tree, which they have made themselves. Besides, kids can decorate the cookies with a white or colorful icing – just place them into a beautiful box, and what an excellent gift for their grandma it would be!

If the cottage cheese is lumpy, you need to press it through a sieve or mush with a blender). Knead the dough until smooth and not sticky. You might need a little bit more or less flour (it depends on how much moisture is there in your cottage cheese, and also the eggs size and quality of the flour itself).

Roll out the dough into 5-7 cm thick. Cut out Christmas tree shapes (or any other New Year theme shapes) with cookies cutters.

Place the cookies on a baking tray lined with baking paper. Separate egg white from yolk. Beat the yolk a little. Brush the cookies with the yolk and sprinkle with brown sugar.

Place the baking tray with the cookies on the middle shelf of the oven and bake for 12-18 minutes until golden brown (the cooking time depends on a number of cookies you have on the tray). The cookies will grow in size, but not much, therefore you can place them on the tray quite close to each other.

Tips:

1. Don’t skip the step of brushing the cookies with egg yolk before baking them, this is what makes them mouth-wateringly golden brown.

2. Once cookies have been baked and cooled down, you can decorate them with icing. For the icing: whisk the remaining egg white along with icing sugar until firm, transfer to a culinary piping bag and decorate (it’ important to remember that eggs for the icing should be absolutely fresh!), otherwise feel free to use ready-made color icing and sugar sprinkles. If you decide to use icing for decorating there is no need to sprinkle the cookies with sugar before baking them.
