Christmas tree apple-banana marshmallows

Ingredients

Soft, delicious, homemade apple-banana marshmallows. Shape the pieces into Christmas trees and here you have something beautiful to decorate the New Year dinner table, to make kids happy, and to put into gift boxes together with homemade sweets for your friends and family.

Prepare the ingredients. Halve the apples, remove the seeds and core.

Arrange on a plate cut-side down and pop into a microwave (the cooking time in minutes equals to the number of apples). The apples should soften through. You can verify that by poking a fork or knife into the middle of the apple. Another option is to bake the apples in the oven at 350 F. Once the apples are cooked through separate the pulp, peel the bananas and puree along with the apples pulp with a blender. Transfer the puree into the saucepan and bring to the boil over medium heat, then cook for another 10 minutes, stirring regularly, until all the moisture evaporates and puree thickens. Measure off 250 g of the puree (you can give the extra puree to your kids or eat it yourself), add 150 g of sugar (set aside the remaining sugar to make a syrup later) and vanilla sugar.

Mix well and set aside to cool. Put the agar-agar into a pot, pour in water and set aside for 10 minutes for agar-agar to soak up.

Set the pot with the soaked agar-agar over the heat and bring to the boil to dissolve the agar-agar and become just like starch. Add 400 g of sugar, bring to the boil, reduce the heat and simmer, stirring, over low heat for 5-7 minutes. The temperature of the syrup should reach 110 C (230 F), the syrup is also ready when it forms thin trickle while being dropped down from the spatula into the pot. While the syrup is being cooked it's time to start whisking the apple puree.

Once puree and sugar mixture has cooled transfer it into the bowl of the stand-alone mixer and start whisking. Once the mixture lightens, add the egg white in two stages: fist one half, then the other one. Whisk on a medium-high speed until mixture is fluffy and stable. After the mixture becomes thick and firm enough to remain still when you tilt or even turn over the bowl, it's time to add the food coloring if you intended to (for instance, to create the light green color add a few drops of both yellow and blue coloring).

Keep the mixer whisk running on the medium-high speed and gradually pour in thin thread of hot syrup aiming for the center of the bowl. After all the syrup has been added, the mixture will start to grow, become fluffy and glossy just like typical meringue.

Transfer the marshmallow mixture into a piping bag fitted with the decorating tip you prefer (we've used the "open star" tip for this recipe) and pipe marshmallow Christmas trees onto baking paper.

You can use this kind of marshmallow mixture as a the icing or topping for decorating cookies, biscuit discs or cupcakes.

Leave the marshmallow for 24 hours to stabilize.

Tips:

  1. To make marshmallows you can use 4 large apples only instead of both bananas and apples. In that case, the marshmallows will be vanilla flavored, as apple taste disappears in the course of cooking. Banana marshmallows has a stronger flavor.
  2. Store marshmallows in an air-tight container.
