Chocolate truffles with chili

Ingredients

 

Chocolate truffles is one of the most famous sweets in the world. France  is their homeland, and as for the name, it comes from the way they look – just like truffles – elite delicacy mushrooms. It’s quite easy to make these sweets at home, and homemade chocolate truffles are just as good, or might be even better than the shop-bought  ones. So, how about making truffles with chili pepper and cognac? These kind of sweets would be an excellent decoration for a New Year feast!

If you are going to give some to kids, just skip the cognac and reduce the chili by half.

Chop the chocolate into small pieces with a knife or food processor to do this faster.

Put the chocolate into thick-base saucepan, add cognac and cream. Place on a medium heat and bring to the boil stirring slightly. As soon as it boila, remove from the heat and stir well for the chocolate to melt. You will get thick chocolate mixture as a result.

Add chili and a pinch of salt to the chocolate-cream mixture. Finely grate zest of ½ lemon (yellow layer only), squeeze ½ tablespoon of lemon juice and add to the chocolate mixture along with the zest. Stir well. Transfer the chocolate mixture to a plate or bowl, cover with clingfilm and place in the fridge for 1-1.5 hours (or in the freezer - for 30 minutes).

Once the time is up, take the mixture out of the fridge. Pay close attention to how the mixture looks: the consistency similar to a soft modeling clay is the right one.

Pour cocoa powder into a bowl. Using teaspoon scoop out balls of the chocolate mixture and roll in the palm of your hands to shape. Roll the truffles in the cocoa powder to coat all over.

Shape the remaining truffles the same way.
