Chocolate no-bake mousse cake

This recipe for a mousse cake is easy-to-make and needs no baking.  The delicate melt-in-the-mouth mousse with bright chocolate flavour on a chocolate biscuits crust – this is really delicious!

Step 1

You can use your favourite biscuits or make a sponge for the base. Grind the biscuits in a blender or crush with a rolling pin. Add 2-4 tbsp cream (depending on the fat content) and melted butter. Mix thoroughly.

Transfer the mixture to the baking form and press all over the bottom in an even layer. We used a 20 cm ring. Refrigerate.

Combine the gelatin with 100 ml cold boiled water and leave for 20-30 mins to swell. Combine both the cheeses, icing sugar, salt and vanilla sugar and whisk till homogeneous. If no chocolate cottage cheese is available, use the cream one. In this case the cake will be paler in colour.

Melt the dark chocolate over the bain marie, let cool slightly.

Add the melted chocolate to the cottage cheese mixture and whisk.

Heat the gelatin (but don’t let it boil!) and put through a fine sieve.

Add the gelatin to the cottage cheese mixture and mix thoroughly. You may use a mixer at a low speed.

Cool the bowl and the whisks before whisking the cream. Whisk the heavy cream till stiff.

Gradually add the whipped cream into the cottage cheese mixture, mixing carefully. Remove the form with the crust from the fridge and pour the mixture onto it. Spread evenly. Cover the form with a cling film and refrigerate for at least 4 hours, preferably overnight.

Put a knife along the edges and carefully remove the ring. Put your knife into hot water for 10-15 secs and dry it to even the sides and the top of the cake. Decorate with chocolate shavings: put a chocolate bar onto a table and use a vegetable peeler to make the shavings.

Tips:

You may replace the cottage cheese by curd but it should be dry and put through a fine sieve.
