Do you love cheesecakes? Chocolate? If yes, you definitely should try this recipe based on the one by Gordon Ramsay. Because you do not have to go to a restaurant to treat yourself to something special. You may just cook it at home!

Preheat the oven to 190°C. Grind the biscuits with a blender. Transfer the crumbs to a bowl, add the melted butter.

Mix till combined and looking like moist crumbs.

Transfer the mixture to a non-stick 20 cm springform; press the crumbs into the bottom using a spoon or a spatula. Bake for 5 mins, then remove from the oven and let cool. Reduce the oven temperature to 170°C.

To make the filling, in a bowl combine mascarpone and Philadelphia (or any other soft cheese) till smooth. Add 2 large eggs and sugar, combine everything with a whisk, but do not beat it.

Melt the dark chocolate in advance, cool slightly and add to the filling. Stir carefully. The filling is ready.

Cover the outer side (the bottom and the sides) of the springform with the cooled base with foil.

Pour the cheese filling onto the base, even with a spatula and bake for 50-60 mins.

Your cheesecake is done when the filling is just set but gives a slight wobble in the centre. Remove from the oven and run a thin knife around the edge of the tin. Let cool in the springform.

When the cheesecake is cooled, refrigerate it for at least 6 hours. Remove from the springform before serving.
