An ice cream cake is a delicate wonderful dish which will be a centerpiece of any festive or everyday table, especially during the summer. And it’s quite easy to cook at home, as the ingredients are available and affordable and no special equipment is needed. The cake is made within 30 mins and frozen overnight, after that you may enjoy it. The cake is delicate and moderately sweet, with a crumbly base from chocolate cookies. The recipe was taken from Olesya Kuprin’s book “Want some cake?”

Step 1

Blend the cookies into fine crumbles using a blender or a rolling pin. Add sugar and mix. We recommend using icing sugar or even omit it. Melt the butter, add to the crumbles and mix till homogenenous.

We recommend using a 18-20 cm silicone springform or a ring.

Peel the bananas (you need 600 g flesh, or 1 kg unpeeled bananas). Puree with a blender.

Break the chocolate into small pieces.

Pour the cream into a sauté pan and heat (but not boil!). Remove from heat and add to the chocolate. Let sit for 30-50 secs.

Mix the chocolate with the cream thoroughly till homogeneous.

Add the pureed bananas and mix well.

Pour the mixture onto the crust and freeze for 10-12 hours.

Remove the cake from the form. Leave the cake at room temperature for 15-20 mins before serving. Decorate with banana slices and grated chocolate or frozen berries.
