    Chimichanga is a Mexican dish, a kind of burrito which is fried with a lot of oil or baked till crunchy. The fillings may vary, and today we suggest cooking chimichanga with apples. Very nice and quick dish indeed!

    Prepare the ingredients.

    In a sauté pan combine water, sugar, starch, cinnamon, salt and lemon juice. Mix with a whisk.

    Bring to a boil over medium heat. Boil till thickened, stirring with a whisk, about 3 mins.

    Peel the apples and remove the core, dice the flesh. Add the apples to the sauté pan and bring to a boil over medium heat, cook till the apples are soft, about 10 mins.

    Put 1-2 tbsp of the filling onto each tortilla.

    Fold 3 edges to the centre and then roll.

    Half-fill the pan with oil and heat well. Add the chimichangas and fry till crunchy, 30 secs per side. Transfer the chimichangas onto a paper towel to absorb the excess oil.
