    Chicken and lemon is a perfect combination of flavours, and if we add some thyme or oregano, you will get a true Italian classic. The recipe is very clear and easy-to-make, you will only have to wait a couple of hours for the chicken to marinate. But this makes cooking in advance possible. All you’ll have to do is to put the dish into the oven.

    Step 1

    Wash the lemons in hot water and pat dry thoroughly. Zest one of the lemons and squeeze the juice. Cut the remaining lemons into 6 parts each.

    Wash the chicken drumsticks, pat dry and put into the form.

    Divide the garlic into cloves but don’t peel. Press each clove with a knife.

    Add the garlic, thyme and lemons to the chicken.

    Mix the lemon juice and zest with 7 tbsp olive oil, pepper and salt. Spread the mixture over the chicken. Wrap into the clingfilm and refrigerate for 2 hours.

    Preheat the oven to 200°C. Remove the form from the fridge and put into the oven. Pour off the liquid from the black olives. After 25 mins remove the chicken and spread the black olives evenly over the drumsticks. Bake for another 20-25 mins. Chicken with lemons and black olives is done! Enjoy your meal! Serve with fresh ciabatta or white bread.

    Tips:

    If you want, substitute Italian herbs or oregano for thyme.
