Chicken cutlets with herbs

Ingredients

Cutlets with herbs are a tender and tasty poultry dish. Even though chicken breasts are considered to be dry, this recipe brings out all the necessary moisture and texture. Another advantage to this dish is that it is very quick to make and the cutlets may be prepared beforehand and kept in the fridge for a couple of days.

Prepare the ingredients by taking off the skin and the covering off the fillet, wash and dry it with a paper towel. Wash the herbs and dry them as well.

Take the chicken fillet, cut it in cubes of 1.5x1.5 cm and place into a bowl.

Chop the herbs finely and add to the chicken.

Add an egg, starch, salt and pepper into the bowl with the chicken and herbs. Stir well, the ingredients shouldn’t turn out too thick.

Heat some oil on a frying pan on a medium fire, put out the cutlets on the pan using a tablespoon. Their size may vary from around 1 to 2 spoons. Fry on both sides until there’s a lightly golden crust on both sides.

You may serve the cutlets with any garnish. Enjoy your meal!

Tips:

  1. You may use any sort of herbs for the cutlets: dill, parsley, basil, coriander etc.
  2. As an exception, potato starch may be replaced with wheat or flax flour.
