Wash and pat dry the chicken and dice. Heat the vegetable oil in a thick-bottomed pan and fry the chicken till white, 2-3 mins. Use a slotted spoon to transfer it to a plate. Reserve some of the chicken for serving (optional).

Add the butter to the same pan and add thinly slice champignons. Cook till all the liquid is completely evaporated.

Wash the carrots and leeks thoroughly. Cut in half and slice thinly, add to the mushrooms. Mix and cook, stirring occasionally, for 10 mins.

In a separate pan combine the chicken and thyme leaves (if you want some extra flavour, use the stems as well). Add the stock, bring to a boil and cook, covered, over low heat for 20 mins.

Add the green beans (you may use frozen) and bay leaves. Season with salt and pepper to taste and cook for 7-10 mins.

Remove and discard the bay leaves and thyme. Use a blender to puree the soup till homogeneous and add the half-and-half. Bring to a boil, turn off the heat and leave for 5-10 mins.
