Chicken Caesar salad

Ingredients

Caesar salad has been probably one of the most popular salads in Russia over the past 20 years. There are so many different fillings for it – seafood, crabs, shrimps, eggs and even cold baked pork, bacon or mushrooms. Today we share with you the most popular variation – chicken Caesar.

Prepare the ingredients.

It’s better to start with cooking chicken fillet. Coat fillet with a mix of salt and ½ tsp mustard, leave for 15-20 min to marinate, wrap in foil and bake for 15 min in oven preheated to 180 C. Then open the foil and bake for another 5 min until light crust. Cool the fillet off.

Cut off bread crusts, cube with a sharp knife, dry in oven for 5 min at 180 C (350 F) and chill.

For the dressing: separate egg white from yolk. Squeeze 2 tbsp of lemon juice. Mix yolk with mustard and lemon juice, add vegetable oil and blend the mixture for 3-5 min with an immersion blender until smooth. Put garlic through a press and add into the dressing. Add salt, ground pepper and stir the mixture.

Wash lettuce and tomatoes, dry with paper towel. Cut tomatoes into 2-4 pieces, cut salad randomly. Grate cheese on a fine grater. Cut chicken breast into pieces.

To serve, prepare the Caesar salad. For this you would need to cover the bottom of the bowl with salad, then put chicken above the salad, dried bread and tomatoes. Top with grated cheese.

You could serve the dressing separately, alternatively you could mix lettuce with dressing and after this lay out all the other ingredients.

Tips:

  1. Iceberg lettuce could be replaced with romaine one or with Chinese cabbage.
  2. Better use hard cheeses such as Parmesan.
  3. You could cook chicken breast and dried bread in advance. Chicken should be stored in a closed container to avoid drying. To give the dried toasts an interesting taste, drizzle them with olive oil before baking and season with granulated garlic after.
  4. To give some zest to the Caesar salad you could add 20 g of pine nuts.
