Chicken and squash pie

Ingredients

If you keep a healthy diet, you will definitely like this pie. Under the cheese crust you will find delicate chicken fillet, juicy squash and almost no flour. We hope that this interesting combination of poultry, vegetables and cottage cheese, as well as the simplicity of the ingredients, will make this pie one of your favourite meals. The recipe was taken from Julia Vysotskaya’s book “365 recipes for every day”.

It all began with gingerbread: they began to get better, she wanted to shoot them on a technique more professional than a digital soap box. Irina got on courses on a food photo, and it was hooked! For the practice of shooting it was necessary to shoot something every day - so, she was carried away by cooking. Every day she learns something new: both the possibilities of her camera, and new dishes!

Step 1

Prepare and scale all the ingredients. Sift the flour, peel the onion and garlic.

Boil the chicken breasts in slightly salted water with some whole black pepper. Let cool, then cut into small pieces.

Preheat the oven to 180°C. Mince the garlic and slice the onions into ¼ circles.

Roughly grate the cheese.

Cut squash into quite big pieces. Slice the remaining squash. Fry the onion with some oil till golden, add the garlic, in a minute add the squash and cook for 7-10 mins, stirring from time to time.

Whisk the eggs with a pinch of salt.

Add the cooked vegetables, chicken and half of the cheese (reserve the rest). Add the cottage cheese, cream and flour. Season with salt and pepper, and then mix well.

Grease a springform (we used a 20 cm) with some butter, dust with some flour and shake off the excess. Layer the bottom of the form with parchment. Transfer the batter to the form and sprinkle with thyme. Top with the squash slices.

Bake in the middle of the oven for 25-30 mins. Sprinkle carefully with the reserved grated cheese and bake till golden, 10-15 mins.

Remove the pie from the oven and let cool. Remove the sides of the form carefully or serve as it is. Sprinkle with some chopped herbs (optional) and serve.
