Cheese muffins with spinach

Ingredients

These super cheesy muffins with spinach will serve as a great snack even for children! In addition, it will a nice compliment to all the cold beer-lovers out there. They are prepared in a matter of minutes and eaten even quicker!

Step 1

Heat the oven to 180 degrees. Take the egg and milk out of the fridge so that they become room temperature. Clean the onion and garlic then cut into small pieces. Melt butter in a frying pan on a low fire, add garlic and onion and fry for about 5 minutes until transparent, stirring constantly.

Wash spinach and dill, cutting off the bottom part up to the leaves. Cut spinach in long stripes, and chop dill finely. Grate cheese on a big grater into a bowl, sift the flour with the baking powder into the same bowl, add a bit of salt (the muffins will be salty enough due to the cheese, so you can skip using salt here), black pepper and mix those ingredients well.

In a separate bowl, using a whisk beat the egg with the milk, then pour in this mixture into the dry mix, stir the dough with a spatula. Add spinach, dill, fried onion and garlic and stir very well until the ingredients are blended in with each other. The dough will turn out rather thick, so you may as well work with it, using your hands.

Fill the forms until 2/3 full. Grease the baking cases; if you are using silicone forms, you may omit this step. Cook the cheese muffins for 15-30 minutes, you may try if they are ready by inserting a wooden stick or a match into the centre to the very bottom: if it comes out clean, it means the muffins are ready!

Carefully take the muffins out of their cases and allow to cool down, then serve.

Tips:

  1. If you like spicy food, you may add some chili pepper (either in form of a powder or a finely chopped fresh one) onto the frying pan, to the frying onion.
  2. You may also use frozen spinach and defrost it before using.
