Bulgur, vegetables and quail eggs salad

Ingredients

If you add some complex carbohydrates (bulgur) and proteins (quail eggs) to your usual vegetable salad, you will get a great full-packed lunch or dinner. Diversify your meals by adding this light and delicious bulgur, vegetables and quail eggs salad.

Step 1

Bring the water to a boil, add the bulgur and season to taste. Reduce the heat till minimum and cook uncovered till the liquid is evaporated, 15-17 mins. Transfer the bulgur to the salad bowl, loosen slightly with a fork and leave to cool.

Boil the quail eggs over medium heat, 3-5 mins after boiling. Pour with some cold water and leave for 5-10 mins. Peel and cut in half.

Prepare the vegetable for the salad: wash the cucumber, half of a medium sweet pepper and cherry tomatoes. Remove the core and seeds from the tomatoes. Cut the cucumbers into slices, and then into quarters. Cut the tomatoes in half and dice the pepper.
We used red and yellow cherry tomatoes. But you may use only one of them.

Add the vegetables to the bulgur and mix well. Season to taste.

Transfer the bulgur with the vegetables onto a plate, decorate with quail eggs and sprinkle with pine nuts. Drizzle with olive oil and serve. Bulgur salad is done. Enjoy your meal!
