If you enjoy experimenting, try combining broccoli with sweet-and-sour cherries, salty brynza and oily cashew. This delicious, healthy and satisfying salad will make a nice summer lunch when you don’t want to have something more substantial.

Prepare and scale all the ingredients. Wash the greens and cherries.

Toast the nuts on a dry pan for 2-3 mins. Let cool.

Divide the broccoli into florets and blanche (i.e., plunge into boiling water for 5 mins and then transfer into ice cold water to reserve the colour).

Crumble or dice the brynza or feta.

Remove the stones from the cherries. If the cherries are too big, cut them in half.

Spread the lettuce over plates, put the broccoli onto them, and sprinkle with cheese, nuts and cherries. Combine the lemon juice with olive oil and drizzle over the salad. Season to taste. Broccoli and cherry salad is done. Enjoy your meal!
