Broccoli and Caulflower Frittata

Ingredients

Frittata is a beautiful Italian word which means an oven-baked omelet with vegetables, cheese or some meat. Cauliflower and Broccoli Frittata is a simple and original dish that can be served for dinner or supper with a nice piece of fresh bread. Frittata is also an excellent choice for a weekend lunch for those who would prefer having a substantial breakfast to just a jar of yoghurt.

Prepare the ingredients. Preheat the oven to 356 F.

Wash the cauliflower and broccoli thoroughly, and then cut into florets. In a pan bring some water to a boil, add a pinch of salt and boil the broccoli and cauliflower florets for about 5 minutes. Drain in the colander (if using frozen vegetables, just defrost them and pour off the water).

Mix eggs with cream, season to taste and whisk.

Grate the cheese finely. Add flour, nutmeg, dried thyme and 2/3 of the grated cheese. Mix using a whisk until everything is well-combined.

Grease a 26-cm baking dish. Use coconut oil or butter. Put both cauliflower and broccoli florets and pour the egg mixture on them.

Sprinkle with the rest of cheese and sunflower, pumpkin or flaxseeds (optional).

Bake for 35-40 minutes. Remove the frittata from the oven and cool slightly before serving.

Tips:

You can also use Brussels sprouts and romanesco instead of, or in addition to cauliflower and broccoli.
