These muffins make a simple and delicious breakfast or dessert. They are so simple-to-make, just combine all the ingredients for the batter and add some berries. Best served with milk!

Prepare the ingredients – they should be at room temperature, and the butter should be softened. Preheat the oven to 170°C. If the berries are frozen, defrost them and discard the liquid.

Whisk the butter with sugar. Add eggs one by one and whisk after each one.

Gradually add semolina and mix.

Add the flour, 1 tbsp at a time, mix till homogeneous.

Put the liners into the muffins tins and fill them at ¾ (about 2 tbsp per each tin).

Bake in the middle of the oven for about 30 mins. Check the doneness with a toothpick – it should come out dry.

Tips:

  1. Decorate the muffins with chocolate glaze or icing sugar (optional).
  2. In the summer serve with a scoop of ice cream and mint (optional).
  3. Alternatively, you may put a piece of chocolate into the centre of the muffin instead of using chocolate drops.
  4. You may also make one big cake. In this case the cooking time will be 45 mins. Check the doneness with a toothpick.
  5. The recipe is quite all-purpose, so you may use any berries and fruits instead of currants.
